Restaurant Service

Restaurant Service is the hands-on counterpart to the tourism program's food and beverage track: you spend half the week learning the standards (service flow, mise en place, wine and coffee fundamentals, captain orders versus guest checks) and the other half actually running shifts at Le Piment Rouge, the school's fine dining room with real paying customers. Assessment is essentially your lab performance, so attendance and how you carry yourself on the floor matter far more than memorizing definitions. It sits in the practical core of the THM curriculum — the place where classroom knowledge about F&B operations gets pressure-tested against actual guests before you graduate into managing them.

Hafta 1
Introduction to the course. Orientation given to the each section
Hafta 2
Students will be informed about the standards of practice restaurant. They will be able to understand flow of operation in PR During the weekdays.
Hafta 3
Service Procedures and Job specifications are declared to students.
Hafta 4
Wine tasting and serving session will be completed. Also they will be informed for 2nd menu items.
Hafta 5
Information regarding to Cocktails will be given.
Hafta 6
Information about different menu types will be given.
Hafta 7
Information about the "Captain Order" and "Guest Check" are distinguished.
Hafta 8
Midterm Week
Hafta 9
Information given on uses of sideboards and crumbing.
Hafta 10
World of coffee is analyzed.
Hafta 11
Information about the cutleries, silverware, chinaware and glassware are explained
Hafta 12
Information will be given on how we complete service of beverages and the mise en place.
Hafta 13
Information will be given on how we close the operation after shift is over.
Hafta 14
Daily revenue report will be explained.
